2 cups flour
1 Tbsp. sugar
2 ½ tsp. baking powder
¼ tsp. salt
Whisk together in a large bowl.
4 eggs, separated
1 ½ cups milk
6 Tbsp. canola oil
2 tsp. vanilla
Whisk the egg yolks with the milk, oil, and vanilla.
Whisk egg whites in a separate bowl until soft peaks form. Add milk mixture to the dry ingredients and mix until just combined. Then gently fold in egg whites. Cook in greased waffle iron.
